CRYSTAL CUSTARD - IPOH OLDTOWN
Due to our final project semester 2 about compact living, we went to IPOH old town for site visit. We went to Ipoh for 3 days 2 night and we stayed at container hotel sekeping kong heng.
Side from the site visitation, we had to do some research based to our architect. Then, for my group (Bryan Cantley's group), we got food trial.
At Ipoh Old Town, there are so many delectable, unique, and interesting food. One of the most popular food and beverage at Ipoh Old Town is the white coffee.
However in this food trial, I'm truly interested at the CRYSTAL CUSTARD. Almost all restaurant in Old Town reserve crystal custard as their special dessert.
A delicate balance between the sweetness of the custard and the bitterness of the caramel with smooth and rich texture, capable to make people addicted to eat again and again.
The crystal custard or egg caramel custard like a combination between pudding and tart. It cannot said as pudding and tart as well and that is the characteristic of the crystal custard.
The main ingredients of the crystal custard are milk or cream, egg yolks, sugar, vanilla, and caramel. However in some restaurant at Old Town, they only use milk (no sugar).
- The step to make this custard is very simple. only to mix the sugar milk, egg yolks, and vanilla together in one pan.
- Then, the mixture must be filtered once or two times.
- Then before pouring the mixture to the bowl or template, pour caramel into the bowl and then pour the custard mixture into it.
- After that, put all the bowls on an aluminum tray, and pour boiled water into the aluminum water
- Next, put into the oven and wait until it finish
- Finally you can eat the crystal custard or cooled first
When you put the custard from the bowl to a plate, the caramel from the bottom of the bowl will flowing down as the sauce. The top of the custard or the caramel seems like transparent and sheen, and that is why it called crystal custard.
There are many types of delicious foods at Ipoh Old Town such as popiah, tau fu fa, es kepal, kaya puff, ipoh cendol, etc. And all of the food is recommended for those who visit Ipoh Old Town
